Roasted Asparagus and Tomatoes

Easy and Delicious: Roasted Asparagus and Tomatoes

Ingredients

1 bunch asparagus
2 plum tomatoes
4 cloves garlic
1 lemon
2 tablespoons extra virgin olive oil
Salt & Pepper

Preparation

Pre-heat oven to 400 degrees.  Cut the tomatoes in half lenght-wise.  Cut the bottoms off the asparagus.  Smash the garlic cloves.  Cut the lemon in quarters. Put ingredients in an oven proof pan.  Drizzle the olive oil and top and mix.  (Don't get carried away with the olive oil - you don't want it too oily.)  Roast for 20 minutes, turning the asparagus at the half-way point. 

Prep work: Cut the bottoms of the asparagus, halve the tomatoes length wise and smash the garlic with your knife.  Salt and Pepper to taste. 

For last night's dinner I served grilled chicken burgers with lemon and marinara with the roasted asparagus, tomatoes, lemon and garlic.  I like chicken burgers better than turkey burgers (see previous post for chicken burger recipe).

Have you guessed that I love lemon?  I squeeze a lemon right into the marinara and let steep.  I'll be posting the recipe for the spicy marinara in the near future.  Not just for pasta.

A glass of red wine and it's dinner - I hope you enjoy these roasted vegetables as much as I do.  You can substitute broccoli for the asparagus - or try it with both!
