Improvised Dinner


The cleaning lady came yesterday and I try to avoid messing up the kitchen for the first few days after she's scrubbed the kitchen.  But I still want to have a dinner that tastes homemade.  On the way home from work I picked up a rotisserie chicken and took it from there.


I had some left over roasted vegetables from the night before.  Rather than microwaving everything, I sliced off the chicken breast and added the left over asparagus, tomato, lemon and garlic.  I tossed in a fresh lemon and put the pan in the oven at 250 degrees for about a half an hour.  The pan I used is my trusty Le Creuset.  It has a non-stick surface and can go from stoptop to the oven.



Soon there were delicious aromas wafting from the kitchen.  My almost homemade quick dinner tasted great - and the price was right.  The rotisserie chicken was under $7 and the roasted vegetables cost practically nothing.  Much cheaper than delivery and practically homemade.  Try it next time your cleaning lady comes - or when you don't feel like putting a lot of effort into preparing dinner.
