Zesty Cole Slaw

Easy and tangy cole slaw dressing

Happy 2012!  My internet problem at home has finally been resolved so I'm back in business.  While cole slaw is a rather inauspicious way to start the year, but this dressing is very skinny and delicious.

 
Diet mayo, lemon juice, olive oil and champagne vinegar

This is another dish of my mother's that I have tried to replicate.  I remember her cole slaw was really tangy and lemony.  I squeezed a half a lemon in the juicer, transferred to a bowl and added fat free mayonaisse and champagne vinegar.

You can keep things super-easy by buying prepared chopped slaw

I got the inspiration for this dish while shopping at Fairway.  They had already chopped slaw with colorful carrots and purple cabbage along with the white.  It coast $1.81 and lasted me several days. 

 
Et viola!

Ingredients

1/2 lemon juiced
1 tbspn fat free mayonaisse
1 tspn champagne vinegar
1 tspn extra virgin olive oil
Salt & pepper to taste

Method

Squeeze the lemon in juicer; transfer to bowl
Add the fat free mayo, champagne vinegar, extra virgin olive oil and salt and pepper
Add the (dry) chopped cabbage and carrots and mix well
Serve and enjoy!
